Savory Quiche



This is an easy way to make a quiche without having to make a crust.  I have served this recipe to my family for years and even children love it. I have also served adaptions of this recipe at bridal and baby showers and for brunch. It keeps very well and can be made ahead and served either at room temperature or heated in the microwave. But fresh out of the oven is delicious and Hubby loves it, too. Who says, 'Real men don't eat quiche?'


Savory Quiche

6-8 servings

Ingredients

8-12 slices of bacon (about 1/2 lb), crisply fried, drained on paper towels and crumbled

1 cup shredded Cheddar Cheese (use a medium or sharp cheddar) about 4 ounces
or Swiss Cheese, or a mixture of cheeses that includes Swiss or Cheddar

1/3 cup chopped onion ( I use a sweet mild onion)

2 cups milk

1 cup Buttermilk baking mix

4 eggs

1/4 teaspoon salt

1/8 teaspoon pepper

Crisco, butter or cooking spray to grease pie plate

Heat oven to 400 degrees.



Lightly grease a 10 inch deep pie plate.




Sprinkle crumbled bacon, shredded cheese, and chopped onion evenly in pie plate.
Beat eggs in large bowl, (if you have a pouring bowl, that would be ideal), then add remaining ingredients. Beat well with a whisk for one minute until smooth.



Pour into pie plate.



Bake until golden brown and knife inserted in center comes out clean, about 30 minutes. Let stand 5 minutes before cutting. Refrigerate remaining pie.

Note: If using a 9 inch pie plate, decrease milk to 1 1/2 cups, baking mix to 3/4 cup and eggs to 3.

    This looks very interesting and yummy. I'm a bit confused about when the Bisquick comes in, though. Do you beat the eggs and use them to make the Bisquick? Does the Bisquick go over the top of the quiche so that it's a kind of "upside-down-quiche"? Sorry if this is a stupid question!

    We don't have Bisquick in Scotland, but I suppose you could make a kind of scone batter from flour, eggs and milk.

    I am sorry you don't have Bisquick there! Any buttermilk baking mix will do, maybe you could look and see what you have there. Maybe a scone mix, but use the amount specified for the Bisquick.

    The Bisquick is added to the eggs and milk and beaten in, then poured over the cheese, bacon and onions in the pie plate.
