Ingredients
1/2 c. butter, melted
1 c. sugar
2 eggs
1 tsp. lemon extract
1 c. flour
1/2 tsp. baking powder
1/4 tsp. salt
3/4 c. fresh or frozen blueberries
1 Tbsp. flour (for blueberries)

Grease an 8"x8" square pan
Mix the sugar into the melted butter. Add the eggs and mix well.
Add the extract and mix in.
Add the flour, baking powder, and salt. Mix well.
Toss the 1 Tbsp flour over the blueberries, then gently mix the flour and berries into the batter. Pour into prepared pan, spreading out evenly.
Bake until top is golden brown, about 25 minutes if using fresh berries, or 35-40 minutes if using frozen berries.
Cool completely.
Sift confectioner's sugar over the top and cut into squares.
These will keep 2-3 days covered.
I think your pictures of the dessert are as good as the dessert itself. What an awesome eye you have for photography! <3
ReplyDeleteWhy Thank you, Stacy Lyn (blush) xx
ReplyDeleteYou temptress, you! And I agree with Stacy Lyn, your photographs are brilliant. What is the wee plant on your table?
ReplyDeleteHI Christine, Thank you! I think the photos came out quite by accident, as I have no expertise whatsoever! But I appreciate the praise! he he!
ReplyDeleteThe wee plant is - get ready for this - a Scottish Heather! I think you were drawn to it, just because it looked so familiar! I bought it so tiny, and now it is growing a little bit, so I brought it in to admire for a couple of days. xx
Blueberries are in the freezer and a large, fresh lemon in the fruitbowl. I am definitely making this one! ;-) Thanks for sharing...
