Cranberries are fresh and plentiful in the market now and this is a delicious way to use them in baking. This bread is easy to make and has just a hint of orange to give it delicious flavor. It is great for bringing to holiday parties, for gift giving, or simply to enjoy with a cup of herbal tea or hot cider.
Cranberry-Nut Bread
Bake at 350 degrees for 50 minutes
Ingredients
1/2 cup butter, softened
3/4 cup sugar
1 egg
1 tbsp baking powder
1 tsp. salt
2-1/2 cups all purpose flour
2/3 cup orange juice
1/3 cup milk
3/4 chopped or frozen cranberries
1 tsp grated orange peel
1/2 cup chopped walnuts
In a mixing bowl cream the butter and sugar until fluffy. Beat in egg.
In separate bowl, stir together flour, baking powder and salt.
Combine orange juice and milk. Add alternately, a little at a time with dry ingredients to creamed butter/sugar mixture, mixing after each addition.
Fold in cranberries, grated orange peel, and half the walnuts.
Pour into a greased loaf pan. Sprinkle with remaining walnuts.
Bake bread in 350 degree oven, 50 minutes or until a toothpick inserted in middle comes out clean.
Cool in pan 10 minutes, remove from pan and cool completely.
Keep wrapped tightly after cooling to prevent bread from drying out.
Store in refrigerator if not eaten right away, or freeze for later use.
Serve with softened butter or cream cheese.
For gift giving, wrap in a pretty holiday dish towel and include recipe.
