During these cold winter days (and nights)
sometimes you need something to warm you
on the inside.
I love making homemade soup
to do just that!
Using produce that is in season
is economical and helps our local farmers.
Here are two recipes using produce in season

Apple Cake.
Preheat oven to 350 degrees
Grease an 8 inch square baking pan
Ingredients
1 cup sugar
1/4 cup room temp. butter
4 apples
1 egg
1 tsp vanilla
1/4 cup chopped walnuts
1 cup flour
1/2 tsp baking powder
1/2 tsp. baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
Mix together the sugar and butter in a separate bowl
until well blended.
Core, peel and dice the apples.
Beat the egg, in a large mixing bowl,
mix in vanilla and walnuts,
then add the apples.
Add the sugar/butter mix and remaining ingredients.
Pour into pan and bake for 45 minutes.
Cool before cutting.
So good with a hot cup of coffee!

Your butternut squash soup sounds delicious, Karen, especially with the cold weather that we're having. I've always wanted to see the original Starbucks. Love that coffee so much. The girls visited it several years ago and said it was fun looking around. Do you go there often, or is it hard to get to where you live way out in the country? I love seeing the splashes of red that you have in your kitchen and on your table.

Hello, Sheri, it is always a treat to have you stop by! Thank you for your kind comments. As for Starbucks, yes, we have them everywhere, even in the small towns and inside the grocery stores! I buy the coffee by the pound to enjoy at home, too. My favorite is 'Breakfast Blend'. Maybe that is why I am such a night owl! It is addicting :o xo

ReplyDeleteThank you for the soup recipe. I have the frozen pulp from several butternut squash which needed to be cooked and saved. I think that will work for the soup. I was wanting a recipe which someone actually used and recommended.

I watched the State of the Union and the response later. The Lady Hailey
from South Carolina Sounded very nice. A big change. I saw the Men who were making hateful looks and sour faces. How sad that is their mentality.
I though it was a wonderful speech and considering he had to fight the Republicans for every thing he tried to do, He is a winner. I have never
been so ashamed of the Senators as Obama's terms. They are like Mad dogs.
