Hello, sweet friends, I hope that you
all had a very special weekend, celebrating
Father's Day.
We had a quiet celebration here on the deck
after a long week of cold rain.
Like magic, the clouds lifted and we had
one beautiful, sunny day, which we
thoroughly enjoyed.
The 'kids' brought over Kentucky Fried Chicken,
so I didn't have to cook! Yay!
The clouds are back today, but I am hopeful.......
To cheer myself up last week,
I bought these beautiful daisies.
Of course I had to buy a new flower bucket, too!
I am loving the galvanized goodness!
Check out my outdoor thermometer!
Yes, it was that cold last week!
This was the dreary scene......
Look at the fresh snow in the mountains!
This is about 3500' elevation.
Brrrrrrrrr!
So what's a gal to do when she's dealing
with Junuary?
Hang out in the kitchen, of course!
A little treat was in order.......
You can see that Whitey Bear knows how
to spend a cold, rainy afternoon :)
He even has his 'blankie'. Lol!
Tea is always nice on a cold, Junuary day!
My little shadowbox :)
Let's look in the pantry for some inspiration.
Definitely needs some organizing :),
but I found a few things to bake something healthy.....
I just need some things from the fridge.
Some of my favorite magnets on the door....
The 'Grandchildren' quote always makes me laugh.
The 'Grandchildren' quote always makes me laugh.
Usually they are holding up funny cartoons from the newspaper,
Scriptures or recipes, but I did some tidying.
The 'American Eskimo Dog' magnet is a bottle opener.
Two favorite quotes.
I found some strawberries in the fridge
and sweetened them with agave syrup....

Everything I need to make Whole Wheat Shortcakes.

My Mom's biscuit cutter.
Baked in a parchment lined pan.
The little biscuit on the left
looks like a smiling face! haha!
Of course I had to sample some!
I used fat-free whipped cream.
In a can. I know, I know....I'm not a purist.
It's actually very good!
And later, some for the two of us.
The whole wheat shortcakes were even better
after resting in the refrigerator, tightly wrapped
for a few hours.
I had some left over and they make great dog biscuits, too!
Thank you for joining me in the kitchen today,
dear friends!
And Happy First Day of Summer!
xoxo

Oh Karen, you are too cute. A Junuary day...{{smiles}}
ReplyDeleteYour photos are always lovely and I can see why you bought the bucket for your flower - it's darling!
Enjoy your week, dear friend, and happy summer! Love and hugs!
Loved exploring your kitchen.... that pantry looks fine to me. Glad you found what you wanted to make shortcakes. Yummy.
ReplyDeleteGlad you had a good weekend! Your desserts look delicious!! I wish I had a pantry like yours. One day! xx
ReplyDeleteyour cooler weather sounds like a treat. texas is hot and humid and just getting ramped up. *sigh*
ReplyDeletelove your smiling biscuit.
Karen, I always enjoy visiting your sweet kitchen. Our temperatures were almost that cold at the start of last week but it sure warmed up and we've had sunny days with temps in the 80's F. My kind of weather for sure but the wind won't stop blowing for some reason. Thanks for stopping by my blog and I wish you a beautiful (and much warmer) summer! Hugs. Pam
ReplyDeleteWe're all hiding indoors because of the weather! Your strawberry shortcakes look delicious. x
ReplyDeleteWhat a sweet kitchen. Loving the NW strawberries right now too.
ReplyDeleteOH my - that was some crazy cold weather! Brrrr is right!
ReplyDeleteI just love your sweet kitchen - it's always so inviting and cozy. Those shortcakes look delish!! They would make my Annie especially happy, as anything strawberry dessert is her very favorite. ;)
Blessings on the week ahead dear Karen! xoxo
I have some strawberries in my fridge too....leftover from making two batches of strawberry freezer jam. I bet the jam would be yummy on your shortcakes. I have to get busy and make something with those berries before they go bad! I love visiting you in your kitchen. Such a cozy place to be on a cold, dreary day.
ReplyDeleteYour kitchen is such a pretty place, Karen. Daisies, tea, and strawberry shortcake sound like great ways to improve the dreariness of cold, damp weather.
ReplyDeleteSo glad you had a great Father's Day, Karen! Such a nice occasion to get together as a family and not having to cook is the icing on the cake!
ReplyDeleteIn spite of the terrible temps and dark clouds you had me smiling as I looked at the pictures of your cozy home and imagined the shortcake baking! We need a little of those comforts in the summer...Christmas in July (which isn't too far off!).
Thank you for a nice visit inside your sweet home...I wish I could pop over for a cup of tea and some good convo!
Jane

Brrr, really too cold but your kitchen looks so very comfortable even your pantry looks fine to me and then you made this delicious strawberry shortcake, I´m mouthwatering. Anyway, it is summertime, it´s raining cats and dogs here but we are hopefull, there will come some warm and sunny days.
ReplyDeleteDearest Karen,
ReplyDeletethat was a wonderful time to beeing with you in your kitchen. It´s so warm and cosy there.
Here in Westphalia it doesn´t look like summer outside. Summer is somewhere else not here. Rainy, stormy April weather! Awful!
Wish you warmer days too. Hugs Barbara
Hello, your kitchen is always inviting, just lovely images. The strawberries shortcakes sound and look delicious. I am glad you all had a happy Father's Day weekend. The weather is crazy, happy summer. Happy Tuesday, enjoy your day and week ahead!
ReplyDeleteHI Karen! I always love visiting you in your happy, cozy home. Yes, fresh daisies would certainly cheer me up, and of course your mountain view, also. The shortcakes look yummy and I'm not a purist either, my friend. I love cool whip and whipped cream in a can...it's all good in my opinion. Love and blessings, Kitty
ReplyDeleteOOh your strawberry shortcake and cream looks delicious. I'm sure the dogs woofed theirs down too.
ReplyDeleteHopefully the sun will shine on your little patch soon :)
Wow Karen I can't believe that you have such cold weather there!! That short cake recipe sure looks good. Thanks for sharing this wonderful recipe with us at Cooking & Crafting with J & J.

ReplyDeleteHave a nice week
i love, love, love your kitchen, it's so cozy and welcoming!!! you know what else i love, kfc and i never tell anyone because i assume it is unhealthy and frowned upon. but every once in a while.....
ReplyDeletei am crushing on all the galvanized goodies these days myself, i think plants and flowers look so much better in them!!
the shortcakes look yummy and i would have gone for the full fat version of the whipped cream!!!! ;)
Hello Karen, your kitchen looks always so cosy and inviting that even we readers start to feel happy.
ReplyDeleteThe snowy landscape is wonderful, even in June.
I too use whipped cream in a can, without any scruples, especially with hot chocolate, it's so fast and practical. :)
Wishing you and yours many sunny and warm summer days! xx
One thing I can say with certainty, it will never feel like Junuary here in Texas during the summer! :-) Your kitchen looks so warm and cozy. The perfect place to be on a rainy day.
ReplyDeleteMarilyn (in Dallas)
Dearest Karen,
ReplyDeleteCan't believe you had fresh snow on top of the mountains close to official summer time! Brrrr indeed!
Here it has been so brutally hot and we did sweat a lot. Our garage got 2 coatings of fresh paint after they pressure washed it on Tuesday. Now it's back in order, kitties are feeling at ease again as they all were hiding outside and felt so displaced with their Bolstered Kitty Sills being taken down... I freshly laundered them and Pieter even created some luxury steps so if the Toyota RAV4 is not home, they still can reach that window sill. What we all do for our fur babies; like Whitey Bear on his 'blankie'. They feel so loved and pampered and do give back to us tenfold!
Yes, baking is the perfect thing to do when the weather is like that. I'm going to bake some of my amaretti cookies, after a long hiatus. So many other things to do and cooking fresh meals from scratch on a regular basis takes up a lot of time. Love to get fresh veggies at Costco but you have to prepare them all. Freezing the extra ones helps with stocking up so you can do other chores... We women are always planning aren't we?!
Enjoy your cozy place.
Hugs,
Mariette
Wow Karen, we could use a bit of the colder weather in Virginia! It's ridiculously warm, not like Phoenix but ugh! Your view of the mountain is always amazing! A cup of tea and your shortcake- heaven!
ReplyDeleteWell, it looks like you found a delightful way to deal with cold weather in June! It is always nice to hang out in your lovely kitchen with you and sample the sweet goodness that you make and share.
ReplyDeleteHope you see more sunshine soon.
FlowerLady
Scrumptious shortcakes!!
ReplyDeleteLovely kitchen...so warm, cozy and a perfect room to spend a day when it's chilly outside.
Karen, your whole wheat shortcakes look simply delicious. I think the whipped cream makes it! Wow, it's raining there in June. That's a nice change, considering it's been very warm here lately. Daisies always cheer up the kitchen. How nice that you bought yourself some. I always enjoy seeing bits of your kitchen, Karen. It's so charming and filled with good food and warmth.

It was chilly last week in Oregon as well. One night we wear sweatshirts the next day it's in the 80s! We had a nice day Sunday which we spent at our son's home. Strawberry shortcake looks so good. I like your green jars and glassware. My favorite are the blue jars. Lovely moon last night too. Have a great week!
ReplyDeleteBecky
What a lovely quaint kitchen you have...perfect for making delicious things!
